One of my favorite foods used to be crab cakes, that was before I turned 18 and found out I was allergic to crab!!! Gasp!!! I know! It was awful to find that out, I loved him it. But I adapted and overcame. Just kidding, it wasn’t big enough of an issue to “get over.” So years ago I found a recipe of a mock crab cake that you used zucchini instead. But it required eggs. Which, after the birth of my daughter (and probably before a little), I had developed a serious allergy to eggs!! So again I was on the hunt for a good substitute for my beloved crab cakes. And… success!!! Hubby even said these were the best version I’ve ever made!! So here ya go, I found a recipe on Pinterest and did a little different. I followed this recipe and got 5 smaller cakes, I will double it when I do it again. Keep in mind, I’m a pinch and shake type of cook and not always a measure out cook. I’ll try to give both. Hope you enjoy!!!
- 1 large zucchini
- Cajun seasoning (a few shakes, or about 1 tbsp)
- Garlic powder (a few shakes or about 2 tsp)
- Onion powder (a few shakes or about 2 tsp)
- Whole-wheat flour (little less than 1 cup)
- 1 tsp baking powder
- 2 tbsp grape seed or olive oil for frying.
- Shred zucchini. I use my food processor or small short strips. Sprinkle with salt and let sit for 15+ minutes to dry out, draining a few times. Then wrap in a towel and squeeze out water.
- Mix seasons (onion powder, garlic powder, Cajun seasoning, flour, powder) with the zucchini.
- Make into small balls (about the size of a golf ball or ping pong ball) and squish a little to make flatter.
- Heat oil to medium-high heat in a skillet. Oil should cover the bottom just a little bit.
- Cook cakes in oil on one side until crispy brown, about 5 minutes. Then repeat on the other side.
So I have written about 5 to 10 blogs lately, the reason you haven’t seen one… cause they are all in my head, which I guess does not count. However, I aim to make them count and actually write them (that’s my plan!). Since my last few entries we have welcomed our sweet little Alexis into our lives! WOW, what an amazing time this has been (and my #1, but not only, excuse, I am kind of a procrastinator too…). I plan on finishing the last two blogs about my pregnancy, I do not want to forget that special time in my life. I also want to write my labor and delivery story for all as it was one of the best experiences I have ever had! And of course the ever so popular, but oh so sweet monthly baby posts. My plan is to write a letter to Alexis each month to include all things about her, what she likes/dislikes, does all day and night, all those wonderful, funny, yucky(not every moment is peachy and rosy), and special moments that we do not want to forget. My intent is to one day turn it all into a book for her and I (and of course daddy and all her family and friends) to read and remember each stage of life! She is the most amazing baby and I do not want to ever forget even just one memory (oh gosh, Aerospace’s song ‘I dont want to close my eyes’ just played in my head LOL)! So in between the nursing, sleeping (holding her as she sleeps), diaper changes, outings, and basic wonderful life, I will do my best to write more, promise (it is more a promise to myself, but maybe everyone else can keep me to it). So I am knee deep (ok lets me honest, I’m much deeper than that) with getting ready for my sweet Alexis to arrive!! I have lots of organizing and planning underway. One of those is finishing up all the necessities we will need to be equipped with for Alexis, one major thing that we still want is our cloth diapers: gDiapers. Not only are they super cute, and marked ever so appropriate with a g (for ‘Giordano’ I’m sure 😉 hehe), but they are wonderful and versatile! They are doing a giveaway and I sure would love to win!!! It would offset our baby needs cost by a bit!! gDiapers in partnership with GuavaKids and See Kai Run wanted to know: “What is your biggest expectation about having a new baby that you hope IS true?” Well, for me I hope it is that I will instantly fall in love and have a love greater than anything I have ever known! I have not met a mom yet that doesn’t love her baby and would do anything for them!! My mom always told me how much she loved us and that it was like no love that she had ever experienced. She even had said she worried if she would have enough love for me, her second, as she did for my older brother, but as soon as she held me she instantly had enough and then some. I began to understand that you never run out of room in your heart, you heart just gets bigger and bigger!! I cannot wait until my sweet baby girl is here, but for now… I must get back to my ‘nesting’ and preparing!!
